Watermelon Soup


There's something about watermelons that are just irresistible on warm summer days. And sometimes it's fun to do more than just eat it plain. This soup makes is easy to put together and tastes truly refreshing.


5cseedless watermelon
2 cucumbers (or 2 cups mango, peeled and diced)
1⁄4clime juice (fresh squeezed)
3Tfresh mint (chopped)
4 basil leaves (chopped)
1⁄8tground cardamom
1Tstevia (or coconut nectar (optional))


  1. In a food processor place 3 1/2 cups of watermelon and 1 cup of cucumber or mango and blend until smooth. Be careful not to put too much watermelon in your food processor or it will overflow and you’ll have watermelon juice all over your counters. 
  2. Next, dice up the remaining 1 1/2 cups of watermelon and cucumber or mango. Mix them to the puree.
  3. In a small separate bowl, combine the lime juice, mint, basil and cardamom. Stir this to the soup mixture.
  4. Chill the soup in the fridge and serve in a few hours.

(If you'd like your soup totally pureed and thin, you can just add all the ingredients into a blender and turn it on. Simple and quick.)
