|2||cucumbers (or 2 cups mango, peeled and diced)|
|1⁄4||c||lime juice (fresh squeezed)|
|3||T||fresh mint (chopped)|
|4||basil leaves (chopped)|
|1||T||stevia (or coconut nectar (optional))|
- In a food processor place 3 1/2 cups of watermelon and 1 cup of cucumber or mango and blend until smooth. Be careful not to put too much watermelon in your food processor or it will overflow and you’ll have watermelon juice all over your counters.
- Next, dice up the remaining 1 1/2 cups of watermelon and cucumber or mango. Mix them to the puree.
- In a small separate bowl, combine the lime juice, mint, basil and cardamom. Stir this to the soup mixture.
- Chill the soup in the fridge and serve in a few hours.
(If you'd like your soup totally pureed and thin, you can just add all the ingredients into a blender and turn it on. Simple and quick.)
